Colorful Asian Slaw

Red cabbage, bright orange carrots, and dark greens mixed with a sweet and tangy peanut sauce.

That is colorful and flavorful food at its finest.

I had this Asian Slaw in mind after we bought the ingredients for fish tacos a few weeks ago. The crunchy texture and bright purple color of red cabbage is the perfect side to a light piece of teriyaki marinated chicken or salmon. It’s important to note that red cabbage can be hard to use up since a little goes a long way, so make a big batch of this cole slaw or think of other ways you can use it throughout the week. Maybe next week you can plan to make fish tacos AND asian slaw!

This Asian Slaw combines fresh chopped ingredients and a store bought peanut sauce that I brightened up to add a little more flavor and dimension. It’s not always easy finding time to make sauce from scratch, so I think buying the bottle and then adding a few additional ingredients allows you to be creative while also efficient! This slaw adds the perfect crunch to any meal and in my case, a fresh piece of salmon.


1/3 of a red cabbage, thinly chopped

2 carrots, thinly chopped or shredded (I used a hand grater)

4 scallions, chopped

A handful of fresh cilantro, rinsed and chopped

1/4 cup of store-bought peanut sauce

Juice of 1/2 a lime

1/8 cup of rice vinegar


Add all of the fresh chopped ingredients to a bowl and combine.

Combine the peanut sauce, lime juice and rice vinegar.

Pour sauce over the cabbage, carrot, cilantro and green onion mix.

Combine, cover and refrigerate! (The longer it sits, the more flavor it’ll have)
