Day in the Life #5

Hello! Happy Friday!

To be honest with you, it feels like Thursday and I felt all sorts of mixed up this morning! Ah such is life.  Well, instead of a Friday Favorites post, I figured I’d bring back a day in the life! This is a typical work day breakfast, lunch and dinner plan. We try to focus on having a big breakfast, lots of fresh fruit for snacks and fresh veggies for lunch. It’s also nice to make enough chicken for dinner to enjoy for lunch the next day. Leftovers are slowly becoming one of my favorite things (Growing up, our mom would always say how she loved leftovers and my brothers and I would always tell her that we didn’t…well, now I understand my mom’s point! She’s so smart!)

Now, we did go out for a family dinner last night, which was an exciting weeknight out and a nice change of pace before Friday! And yes, we went wild on some delicious and fried appetizers (because ya gotta live a little, right?!) and I will tell you all about it below!

Breakfast

Glass of water

Cup of coffee with unsweetened almond milk

2 eggs cooked over medium

1 sliced peach

1 slice of banana bread (courtesy of one of Frank’s clients – YUM!)

Snack

Lunch

Leftover teriyaki chicken thigh, sliced

Small salad with spring mix greens, cherry tomatoes, green pepper and cucumbers

1 tbsp olive oil, salt and pepper to taste

Key Lime 100 calorie Yoplait Greek Yogurt

1/4 cup of granola

Dinner

Last night, we headed out to the Charlestown Ratheskeller restaurant in Charlestown, RI! Frank’s parents had heard great things about this place and with his brother Kyle heading back to California tomorrow (he’s been in RI visiting from LA for the last 10 days), we wanted to do a fun family outting before he left! This place is awesome. The restaurant is located far back in the woods of southern RI.As we were driving in, I couldn’t help but think we were in another world! There was so much farm land, winding roads, and cute cottage-like houses along the way. It was a very quaint and seemingly small populated area, but when we arrived at the restaurant, the place was packed! We took it as a good sign and headed in.

The Rathskeller is a family friendly restaurant and they have several dining areas. The main dining room, a tavern and bar, as well as an outdoor patio. On top of that, there is an entire back yard full of lawn games and an outdoor bar! The guys enjoyed playing bocci before dinner and after dinner we headed out for a bonfire and some more games. They also have a beach volleyball court, horseshoe toss and tons of corn hole. We heard the restaurant also hosts corn hole tournaments! Do NOT sign me up for that until I get some more practice under my belt 🙂

Here’s what we had to eat. Everything was delicious and we were SO full by the end of the night.

Beverages of choice: Wine and water, wine and water, wine and water…gotta hydrate right?

The Appetizers were ordered to share among the 6 of us (unfortunately no photos because we were too hungry!): The best fries you’ll EVER have, mussels, calamari w/ hot peppers and hot chicken wings.

Main course: Roasted beet salad topped with salmon and goat cheese, hazelnuts, and a delicious sweet and savory vinaigrette

1/2 Marathon Update

And…the day has finally come. Tomorrow morning, Frank and I will set out to conquer the Jamestown Half Marathon! We are excited and a little nervous, but feeling prepared and ready to take on those dreadful hills. It will not be an easy journey, but I’m determined to make it fun! Thanks for following along on my training journey! Wish us luck!!
