Chili-Rubbed Salmon

Last week I made a refreshing summer meal featuring salmon and sweet mango. Here is the recipe!



Serves 2

1 lb. salmon fillet

2 tbsp. chili powder

1 tbsp. olive oil

1 mango, small dice

1 avocado, small dice

1/4 cup red onion, minced

1 lime, juiced

1/8 cup cilantro, chopped


1. Heat oven to 400 degrees

2. Place salmon on a greased pan

3. Lightly salt the salmon and let sit for 10 minutes

4. Chop mango, avocado, red onion, and cilantro

5. Add lime juice to the chopped salsa and mix

mango salsa for salmon

6. Drizzle salmon with olive oil and evenly distribute chili powder; rub until well combined and distributed over the fish

7. Bake salmon for 30 minutes

8. Serve salmon on the plate and top with a couple scoops of mango salsa

9. Serve with a roasted veggie (I love asparagus and salmon)
