Happy 2015 to all of my friends and family!
I can’t believe it’s already here, but I’m welcoming it with open arms and am so excited for the year ahead. We have lots planned for 2015, and I can’t wait to get the ball rolling!
So, I thought I would start this new year (technically it’s the fifth, but I guess I’m considering this first Monday the official start!) with our weekly meal plan and grocery list. It was a big one on Sunday and it felt great to fill our fridge with lots of delicious and nutritious eats for our week.
Here’s our plan for the week:
Breakfast: The usual eggs and ezekiel toast or oatmeal with coffee
Lunch: Salads (lettuce, red cabbage, tomatoes, peppers, cucumber, olive oil and balsamic vinegar) with marinated chicken
- Marinated chicken: 4 skinless boneless chicken breasts, place in a ziploc bag, drizzle olive oil, balsamic vinegar, a dash of liquid smoke and worcestershire sauce, salt, pepper and Montreal chicken seasoning. Let marinate for at least an hour in the fridge before baking for 25 minutes at 400 degrees!)
Snacks: Apples, almonds, bananas, lemon water, green tea
Sunday: Fish tacos
Monday: Baked salmon with leftover mango salsa and roasted broccoli
Tuesday: Japanese style marinated chicken with asparagus
Wednesday: Leftover chicken with quinoa and kale salad
Thursday: Spaghetti squash with ground turkey tomato sauce and frozen veggies
*Most of our meals are always served with a side salad so we always buy lots of greens!
(*Already on hand: Almond milk, ezekiel toast, frozen veggies)
- Salmon (1 lb.)
- Cod (1 lb.)
- Boneless skinless chicken breasts
- Ground turkey (3 lb.)
- Spaghetti squash (x2)
- Red cabbage
- Red onion
- Tomato sauce
- Cholula hot sauce
- Tortilla wraps
- Canned chicken soup
We bought a few extra toiletries and things, but this list reflects most of our go-to’s for our weekly meals. I hope this helps as you prepare for a healthy week as well!

**PS. For those of you living in the Rhode Island area, I highly recommend Ken’s Ramen on Washington Street in downtown Providence. It’s a really small restaurant with a hip/funky feel (not kidding!). The food was delicious and our wait for a table took no time at all! If you’re looking for a new restaurant that caters to your comfort food taste buds, this is the spot for you and a great winter option for some hot noodle soup!
